Zucchini Bread 3 eggs 1 c. salad oil 2 c. sugar 2 c. peeled and grated zucchini 3 tsp. vanilla 2 or 3 cups sifted flour (she uses 3, her mom used 2) 1 tsp. baking soda 1/4 tsp. baking powder 1 tsp. salt 3 tsp. cinnamon 2 c. walnuts (optional) Beat eggs until foamy. Add sugar and oil, and beat. Stir in zucchini. Sift together dry ingredients, then add to liquid ingredients. Stir in 1/2 cups of walnuts if desired. Divide batter equally between 2 greased and floured loaf pans, or use a Bundt pan (makes it look more like a dessert.) Bake in 325 degree oven for 1 hour or until done.
