Welsh Rarebit 1 oz butter 1 tsp made (not dried) mustard 1/4 tsp salt 2 dashes pepper (to taste) 2 Tbsp fresh white breadcrumbs 1 egg yolk 4 oz strong Cheddar Cheese, grated 3 Tbsp beer To Serve: 3 slices hot buttered toast. Note: This mixture must never boil or it will go stringy. 1. Melt butter in saucepan. 2. Add mustard, salt, pepper, and breadcrumbs. Stir over gentle heat. 3. Add egg yolk, mix in, then cheese and stir to melt. 4. Add beer, mix in. 5. Spread onto hot buttered toast.
