HOT POTATO CASSEROLE 750 g (1 1/2 lbs) old potatoes 60 g (2ozs) butter 1 onion 1/3 cup sour cream 2 tblsp milk salt and pepper paprika Peel and chop potatoes, cook in boiling salted water until tender; drain. Mash well. Melt butter in pan. Add peeled and chopped onion. Cook until transparent. Add to potato with soured cream and milk, mix until smooth, season with salt and pepper. Spoon potato mixture into ovenproof dish. Sprinkle with paprika. Bake in oven at 180 C (350 F), about 15 minutes. Serve with roasts or chops, etc. If there is any left over, cut into squares and fry up with some bacon. Really good, we think it is better this way!
