Potato Curry 4 medium russet potato's, peeled and diced 1 medium onion Spices to include 1 tblsp of the following: curry powder cumin powder chili powder (maybe more) turmeric salt and pepper to taste 1 can tomato's in rich puree 1.5 cans chicken broth 3 Tblsp coconut milk Fry onion in oil until translucent. Add potato's and fry for a couple of minutes. Add all spices and cook for another minute or so. Add can of tomato's and cook for another couple of minutes. Add remaining ingredients and cook until potato's are soft. You may need to add more chicken broth to keep potato's from drying up. Should have a bit of broth when done. Serve with yogurt or sour cream for toppings.
