German Mashed Potatoes 1/2 lb Bacon fried to crisp and crumbled 3 lb potatoes peeled and quartered 1 large onion chopped 3 tblsp parsley chopped 1. Fry bacon until crisp. Remove with slotted spoon and crumble. 2. In the same pot, fry onion. 3. Boil potatoes. Drain and mash as usual using reserved bacon fat and onion. 4. Stir in bacon and parsley. Serve.
