Bacon & Egg Pie Yields 4 Servings 3 Eggs, Separated 1 lb Bacon 1/2 Cup Flour 1 Cup Sour Cream 8 oz. Pastry Dough, Prepared 1 Medium Tomato, Sliced 4 oz Mozzarella, Shredded 1/2 tsp Salt Pepper to taste Preheat oven to 350 degrees. Fry bacon crisp. Reserve some bacon grease for greasing the pie pan. Discard the remainder. Cut bacon into 1" pieces. Grease a (9") pie pan with the reserved bacon grease. Line the pie pan with pastry dough. Place the bacon pieces, tomato slices and shredded cheese on the pastry crust. Beat the egg yolks and combine with the sour cream. Add the flour, salt and pepper to taste to the egg yolk mixture. Beat the egg whites until stiff. Fold the egg yolk mixture into the egg whites. Spread over the bacon, tomato and cheese. Bake 35 minutes.
